Brisbane, Queensland Jan 27, 2026 (Issuewire.com) - The group has submitted a development application to revitalize a popular Brisbane destination, transforming it into a dynamic multi-faceted hospitality hub.
Renovations are set to begin once the application is approved, with a completion timeline of seven months, aiming for an opening in the first half of 2024.
Plans include the demolition of the existing cafe to make way for the two-story Pavilion, which will feature a dining area, a gin distillery, and a First Nations’ herb and food garden.
The rooftop will host experiences curated by the traditional owners of Mount Coot-tha, focusing on native foods and stories from local legends. Visitors will also enjoy stunning views from a connecting bridge leading to a viewing platform.
The renovations will also see the heritage-listed restaurant transformed to offer an elevated dining experience, complemented by a casual bar. The ground floor of the restaurant will double as a theatre, celebrating the culture and history of Mount Coot-tha’s indigenous heritage.
“We’re aiming to transform The Summit into an iconic, exciting site for both locals and visitors to Brisbane,” says Godfrey Mantle, owner of Mantle Group Hospitality.
“The restaurant and café are in urgent need of renovation, and we aim to maximize the venues to take full advantage of the breathtaking views.”
Mantle Group Hospitality has partnered with architects Hogg and Lamb to bring this vision to life.
